Boil 2 red beets in salted water for 12 minutes. Let
it cool and them remove the skin and dice them into chunky cubes. Take a cup of frozen peas and add them to hot salted
water for 2-3 minutes and drain. Take a quarter
cup of feta cheese and break it into cubes same size as the beets. Halve
a cup of cherry tomatoes. To serve, make a
bed of crunchy romaine lettuce leaves, add
layer the beets, peas, cherry tomatoes, and feta cheese on top of it. Drizzle lemon
juice and pepper and optionally salt. Surprise your taste buds and
visual sensors with this refreshing colorful salad.
