Breaking away from tradition with Oats Upma

Soak a one-third cup of Oats in hot water for few minutes. Heat a teaspoon olive oil in a skillet; add quarter teaspoon each of cumin and mustard seeds, finely chopped green chilies, a teaspoon of grated ginger, few fresh curry leaves, and half a cup of chopped onions; sautĂ© (watch out for the sputters) until the onions start turning translucent. Add one diced tomato. Add half a cup of water and a pinch of sea salt and bring the water to a boil.  Add the soaked oats. Cover and let it cook on medium heat until the water gets absorbed. Garnish with a tablespoon of chopped coriander leaves. Enjoy this flavorful dish from Southern India.

  1. I have a quick way of doing this in the microwave and I take it to work in the morning.
    In a Microwave safe bowl take a quarter teaspoon each of cumin, fenugreek(methi) and mustard seeds, finely chopped green chilies, a teaspoon of grated ginger, few fresh curry leaves. Now run them in the microwave for 1 minute. Now add whole rolled oats alongwith water and salt. Cook for 2 minutes.
    Now Squeeze some lemon juice and add coriander.
