Spinach and Leak Soup

Heat oil in a saucepan. Add 3-4 of crushed garlic, a tablespoon of grated ginger, one green chili, and one diced onion. Sauté for few minutes. Add coarsely chopped 12 oz. spinach and a leak. Sauté for few minutes. Add few soy protein cubes or tofu cubes. Add a dash of soy sauce and a pinch of cumin powder. Add one cup of vegetable broth and boil for few minutes. Puree the soup using an immersion blender. Add salt and pepper to taste and serve hot. This heart-warming green soup is full of fiber and very tasty. Enjoy.
